Muffins are a type of quick bread that is popular around the world. They are usually small and round, with a light and fluffy texture. They may be sweet or savoury and can be served as part of breakfast, lunch, or dinner.

Brief History and Origin

The history of muffins is as varied as their many flavours. Some sources suggest that muffins were first created in England as early as the 17th century. The earliest known recipe for “muffins” dates back to 1615, when a cookbook author described them as being made with flour, butter, eggs and sugar. In America, it was in the 19th century that muffin recipes began to appear in cookbooks.

Muffin – The Recipe

Preparation Time: 20 mins

Cooking Time: 25 mins

Total time: 45 mins

Servings: 12

Ingredients

2 eggs

125ml vegetable oil

250ml milk, semi-skimmed

250g white sugar

400g all-purpose flour

3 tsp. baking powder

1 tsp. salt

Instructions

  1. Prepare the oven and preheat it to 200 degrees C. Also, prepare a 12-cup muffin tin by lining the cups with baking paper.
  2. In a large bowl, add flour, salt, baking powder and sugar, mix all the ingredients and make a well in the centre.
  3. Crack eggs in a small bowl and whisk, then add oil and milk until everything is well combined. Pour the whole egg mixture into the dry ingredients and fold gently using a fork until everything is just moistened.
  4. Divide and transfer the batter to the prepared muffin tin, and fill ¾ full of each cup. Place in the oven and bake for 25 minutes or until the colour turns light brown and the top springs back when lightly pressed.
  5. When ready, remove from the oven, leave to rest until slightly cool, remove from muffin cups and place on the wire rack until cooled completely. Serve and enjoy!

Here are a few ways you can change this basic recipe to adjust it to your liking:

  • Blueberry Muffins: These easy and quick muffins are soft and have little pockets of blueberries bursting out with flavour. This recipe is a one-bowl recipe that includes fewer ingredients with delicious results.
  • Chocolate Chip Muffins: These are a little soft, dense, and filled with so many chocolate chips that you will have them in every bite. Indeed, these muffins will become your favourites.
