Ingredients
2 eggs
125ml vegetable oil
250ml milk, semi-skimmed
250g white sugar
400g all-purpose flour
3 tsp. baking powder
1 tsp. salt
Instructions
- Prepare the oven and preheat it to 200 degrees C. Also, prepare a 12-cup muffin tin by lining the cups with baking paper.
- In a large bowl, add flour, salt, baking powder and sugar, mix all the ingredients and make a well in the centre.
- Crack eggs in a small bowl and whisk, then add oil and milk until everything is well combined. Pour the whole egg mixture into the dry ingredients and fold gently using a fork until everything is just moistened.
- Divide and transfer the batter to the prepared muffin tin, and fill ¾ full of each cup. Place in the oven and bake for 25 minutes or until the colour turns light brown and the top springs back when lightly pressed.
- When ready, remove from the oven, leave to rest until slightly cool, remove from muffin cups and place on the wire rack until cooled completely. Serve and enjoy!
