Devil’s Food Cake – The Recipe

Ingredients
- 50g unsweetened chocolate
- 225ml water
- 100g butter
- 275g white granulated sugar
- 2 large eggs
- 175g all-purpose flour
- ¼ tsp. baking powder
- Pinch of salt
For the American Frosting
- 450g caster sugar
- 2 egg whites
- 135ml water
Instructions
- Prepare the oven and preheat it to 175 degrees C. Also, prepare 2 8” pans by lightly greasing and then dusting with flour.
- In a pan over medium heat, add chocolate and butter until it melts. Then mix and remove from heat, and leave to sit until cool.
- In another bowl, add eggs and sugar, whisk until light in colour, then pour in the chocolate mixture and beat well. Now add boiled water and mix until well combined.
- Add salt, baking powder and flour in another bowl, and mix well and thoroughly to the chocolate mixture. Then add milk and mix again until well incorporated.
- Transfer the batter to the prepared pans and place in the oven; bake for 30 minutes or until an inserted toothpick comes out clean.
For the American Frosting
- In the meantime, add sugar in a saucepan over medium heat, pour in water and heat until sugar dissolves. Then bring to a boil and boil until temperature reaches 115 degrees C.
- In a deep bowl, add eggs and whisk until stiff peaks appear. Pour over the sugar mixture while whisking until the mixture turns matt around the edges.
- Sandwich the cakes with a little frosting in the middle. Decorate the cake with the remaining frosting peaks all over the cake. Place in a cool place before serving.
