Ingredients
- 100g all-purpose flour
- 300ml milk
- 2 eggs
- 1 tbsp. melted butter
- Pinch of salt
For the filling
- 250g mascarpone
- 1 lemon zest
- 250ml double cream
- 50g white granulated sugar
Instructions
- Add milk, eggs, flour, salt, and butter to a bowl, whisk until smooth and consistent batter, and rest for 30 minutes.
- Place a frying pan with a 16cm base over moderate heat and lightly grease with butter. When hot enough, add batter and cook each side of the pancake for 1 minute or until golden; transfer to a warm place.
- To prepare the filling, in a bowl, add all the filling ingredients until semi-whipped and still spreadable.
- Spread 2 to 3 tbsp. of filling cream on the crepe using the back of the spoon, then place another crepe on top and repeat the alternate crepe and cream filling until all the crepes are utilized.
- Then place in the refrigerator for at least 1 hour until set.
- When ready, take the cake out of the refrigerator, slice and serve.
