The chocolate tart is a classic dessert with a rich and creamy texture. It’s made with a buttery pastry crust filled with a smooth, creamy chocolate ganache. The tart is then baked until the top is slightly crisp and golden. It’s a simple yet indulgent dessert that impresses any crowd.

Brief History and Origin

Chocolate tart has been around since the 15th century when it was first documented in Spain. The original recipe called for ground almonds and sugar to be mixed with melted chocolate and set in a pastry shell. Over time, variations of the recipe began to appear throughout Europe, with some recipes using cream instead of almond paste.

In the late 19th century, French chefs started experimenting with new flavours, such as raspberry or strawberry jam and adding fruit fillings to their tarts. By the early 20th century, the chocolate tart had become a popular dessert in Europe and America.

Chocolate Tart – The Recipe

Ingredients

For the Short Crust

  • 160g all-purpose flour
  • 1 tbsp. white sugar
  • ¼ tsp. salt
  • 115g cold butter
  • 2 tsp. water

For the Ganache

  • 120ml heavy whipping cream
  • 340g semisweet chocolate chips

Instructions

  1. In a food processor, add salt, sugar and flour, process until everything is well combined, add butter and process until crumbly texture.
  2. Gradually add water while keeping processing until the mixture starts to come together, then transfer to a bowl and leave in a refrigerator for 1 hour.
  3. Take the dough out of the refrigerator and place it on the flour-dusted working surface; roll it out using a flour-dusted rolling pin to make a 10″ disc.
  4. Prepare the oven and preheat it to 220 degrees C. Also, prepare an 8″ tart pan by lightly greasing it with butter.
  5. Place the dough disc into the prepared tart pan, trim extra edges and insert holes in the bottom and sides of the dough.
  6. Transfer the pan to the preheated oven and bake for 2o to 25 minutes or until light brown. When ready, remove from oven and leave for 1 hour until completely cool.
  7. Heat the whipping cream in the microwave oven for 2 minutes or until bubbles appear on the edges; remove from the oven.
  8. Add chocolate chips and leave for 15 to 20 seconds, then whisk until consistent and smooth.
  9. Take the crust out of the refrigerator, pour over chocolate ganache and leave to room temperature for 30 minutes or until set.  
  10. Transfer to the refrigerator and chill for at least 1 hour before serving.
