Ingredients
For the Short Crust
- 160g all-purpose flour
- 1 tbsp. white sugar
- ¼ tsp. salt
- 115g cold butter
- 2 tsp. water
For the Ganache
- 120ml heavy whipping cream
- 340g semisweet chocolate chips
Instructions
- In a food processor, add salt, sugar and flour, process until everything is well combined, add butter and process until crumbly texture.
- Gradually add water while keeping processing until the mixture starts to come together, then transfer to a bowl and leave in a refrigerator for 1 hour.
- Take the dough out of the refrigerator and place it on the flour-dusted working surface; roll it out using a flour-dusted rolling pin to make a 10″ disc.
- Prepare the oven and preheat it to 220 degrees C. Also, prepare an 8″ tart pan by lightly greasing it with butter.
- Place the dough disc into the prepared tart pan, trim extra edges and insert holes in the bottom and sides of the dough.
- Transfer the pan to the preheated oven and bake for 2o to 25 minutes or until light brown. When ready, remove from oven and leave for 1 hour until completely cool.
- Heat the whipping cream in the microwave oven for 2 minutes or until bubbles appear on the edges; remove from the oven.
- Add chocolate chips and leave for 15 to 20 seconds, then whisk until consistent and smooth.
- Take the crust out of the refrigerator, pour over chocolate ganache and leave to room temperature for 30 minutes or until set.
- Transfer to the refrigerator and chill for at least 1 hour before serving.
