Palmier is a type of pastry that has been around for centuries. It has become increasingly popular recently, especially among those who enjoy the sweet and savoury combination of flavours. The pastry is made from puff pastry dough, rolled out into a thin sheet and then cut into small rectangles. It is then topped with sugar, cinnamon, and other ingredients before being baked until golden brown.
Brief History and Origin
The origin of Palmier dates back to the 1600s when it was first created in France by French bakers. It was originally called “palmer” or “palmette”, which means palm tree in French. The name was changed to Palmier when it became more widely known throughout Europe. Over time, the recipe has evolved, but it remains largely the same as when it first originated.

Here are a few ways you can change this basic recipe to adjust it to your liking:
- Chocolate Palmiers: The crispy, crunchy palmiers with chocolate hazelnut spread are easy to make and delicious. They hardly need three ingredients; the puff pastry, egg and hazelnut spread.
- Strawberry Palmiers: the fresh strawberry and a hint of lemon juice throughout the puff pastry make the delicious Palmier. The sweet and tart flavour from the lemon juice and strawberries gives a unique taste.
- Peanut Butter and Chocolate Palmiers: These cookies have a layer of Reese’s peanut butter chocolate cups between the delicate buttery and crispy puff pastry. We love the nutty richness in every bite because of the peanut butter cup addition.
- Matcha Palmier: The bitter and earthy flavour from the matcha in the puff pastry is unique to taste and pretty to the eyes. We love matcha’s contrasting flavour and texture with the buttery puff pastry.
- Savoury Palmiers: Palmiers are always enjoyed as sweet, but this recipe makes them ideal for savoury snacking. We love the cheese, and sweet pesto swirls in the puff pastry; it is salty, flaky and yummy.
